The Best Chocolate Cake Ever!!!

The best chocolate cake ever?  Really?  Yes, really!!!



Do you remember Candise's going away party?  I do :( .  For her party I wanted to make a special yummy cake.  I literally did a google search for "the best chocolate cake ever".  I read several recipes and then tried out 3 different ones...and this one truly is the best!  I originally wanted to make one from scratch because "scratch" is the best right?  I almost didn't try this one because it used a box cake mix but boy am I glad I did!  This recipe is SO EASY!  And I promise you won't be disappointed :)

Here is what you will need for the cake...

1 box of devil's food cake mix
1 small pkg. Jello instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 beaten eggs
1/2 cup of milk
1 tbs. vanilla
2 cups (same as 11.5 oz. package) of chocolate chips

You won't believe how easy this is!  Let's get started ok?

Preheat your oven to 350 degrees.

My mom gave me this mixer a few years back and I love it so very much!  Good job mom :).  This is the beater I like to use for the mix but I'm sure and hand held mixer would work fine.

In your mixing bowl let's add all of the ingredients except for the chocolate chips.  I told you it was easy :)


Mix well and remove the bowl from the mixer.

Now we will add the 2 cups of chocolate chips and stir them in with a spoon.

I use 2 round nonstick pans for this cake.  Spray the bottom of each pan with nonstick cooking spray to be extra safe.  This mix is thick so you will need to scoop the mix into each pan.
When your oven reaches 350 degrees place both pans in and cook for about 45 minutes.  I keep and eye on them though and use a toothpick to check.

Tick tock, tick tock...

While we wait we can wash our mixing bowl because we will need it for the frosting.

45 minutes later,

Check with a toothpick.  Mine is done and looks like this.  Let it cool.

While it's cooling lets make our frosting.  I don't normally like that thick buttercream frosting but this recipe is between a buttercream and a whipping cream frosting.  If they got together and had a baby this is what you would get. :)

Here is what we will need for the frosting

1 cup of Crisco shortening
4 cups of powdered sugar
1/4 tsp. salt
1 tsp. vanilla 
1/3 cup heavy whipping cream


This is the beater I use for making the frosting.


In our mixing bowl, let's cream the shortening until nice and fluffy.  


Turn the mixer on a low speed and slowly/gradually add the 4 cups of powdered sugar.  Continue creaming until well blended


Don't worry that it doesn't look like frosting yet.  Mine looks a little like fluffy white snow.


Let's add 1/4 tsp. salt and 1 tsp of vanilla while mixing on low.


Now we can add 1/3 cup of heavy whipping cream.  Mix on low until well mixed.  Then blend on high speed until frosting is light and fluffy.

This is what mine looks like.  After our cake is cooled completely it is time to frost it.


On the first round put a nice helping of icing for between the layers and spread evenly. 



Carefully place the second round on top of the icing.  This time I placed them bottom to bottom but I think I prefer top to bottom.  Next time.   


Then add the rest of the frosting on top of the cake and smooth it on top as well as the sides.  Please don't judge my frosting.  This is the part I am not very good at.  

Pour yourself a tall glass of milk and enjoy.  OMG!!! Sooooooo gooooooooood!!!!!!!
