Back in the day I went to San Diego city schools and when I was in school they had the best peanut butter chew bars in the world!!! Well, a friend of mine came across the recipe that was published in an old school newsletter and this is where this recipe comes from.

First, preheat you oven to 350 degrees.
Here is what we will need:
2/3 cup shortening
2 cups sugar
1 cup brown sugar
1 cup peanut butter
4 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. salt
1 cup rolled oats
Measure 2/3 cup of shortening and put it into our mixing bowl.
Pour in the 2 cups of sugar.
Add 1 cup brown sugar.
Add 1 cup of peanut butter.
Add 4 eggs.
Add 2 tsp. vanilla.
Mix on medium high speed for about 4 minutes. Make sure you scrape down the sides with a baking spatula/scraper as well as the bottom of the bowl to insure everything is mixing well together.
In a separate bowl, pour 2 cups of flour.
Add 2 tsp. baking powder.
Then 1 tsp. salt
Use a whisk to blend the ingredients.
Add 2 cups of rolled oats.
With a spoon, mix the oats with the flour mixture.
Pour the flour and oats mixture into the creamy mixture. Mix thoroughly with blender on medium high speed.
Use the spatula to check that everything is well mixed.
Spray your baking pan with non stick spray.
Spread the mixture into the pan so that it is evenly distributed. When they bake they won't rise that much and you only want it to be no more than 1/2 inch thick.
Place it in the preheated oven at 350 degrees for 25-30 minutes.
Here is mine after 30 minutes, slightly brown. mmmm smells good.
Now for the glaze. This is the key part of the recipe that makes it so perfect.
You will need: powdered sugar, peanut butter, and very hot water
In a glass bowl put 6 tbs. powdered sugar
Add 3 tsp. peanut butter
Then add 9 tsp. of very hot water.
Use a whisk to mix together.
Drizzle the glaze over the top and let cool.
After they have cooled completely, cut into squares and enjoy!!! They are at their best when they are completely cooled down to room temperature.

ReplyDeleteLove those peanut butter chews. I use to go to my daughter's elementary school just to buy them. I enjoyed them at Balboa elementary, Marston jr. High, and clairemont high school. I just gave the recipe to a coworker who also shares the fond memories of peanut chews and has agreed to make some and wrap them in saran wrap. To recreate the past

ReplyDeleteI had to double-check the recipe because I had made the batter for this from another recipe and I wanted to compare it this one was exactly the same except it says in the ingredients one cup of oats in the directions it says to add 2 cups of Oats the original recipe that I used called for 1 cup so I am making this with one cup I think there just might have been an error with directions
