Ruby Tuesday's Sonora Chicken Pasta


Many years ago when I was visiting my brother in Missouri he took me to Ruby Tuesday.  I had this pasta dish and could not get it out of my mind.  It was so good but there was no Ruby Tuesday near me.  Then many years later they opened one near me.  I was soooo excited and went there as soon as they opened.  To my disapointment they are no longer serving this dish.  This is my attempt at recreating it.  If you have had this before, you know that I added the corn to my version...haha it just seemed like the right thing to do :)   I hope you enjoy.

This is and easy recipe to make so lets get started...


boneless skinless chicken breast
penne pasta
2 cans of fiesta nacho cheese sauce
chipotle peppers in adobo sauce
heavy whipping cream ( you could use milk or half and half as well)
black beans
corn 
white onion
roma tomatoes

Now we will start with cooking our chicken.  Usually I grill my chicken for this recipe on the bbq or use my George Forman grill.  This time I baked it in the oven and attempted to create the grill marks with a new cast iron pan I bought...but I have not perfected using it yet. How you cook it is up to you (of course haha) I just remember the original chicken having grill marks so...

Now let us start the sauce

Pour the 2 cans of fiesta cheese sauce into your sauce pan.  If you cannot find the fiesta cheese you can use regular cheese sauce and then add salsa or some Ro Tel diced tomatoes and green chilies.  

Add 1-1 1/2 cups of heavy whipping cream.  Combine with a whisk.

Add 2 - 4 tbs. of adobo sauce from the chipotle peppers and whisk.  Heat sauce on medium until it reaches a good temperature (whisk periodically as it heats).

Boil some water in a pot to cook the pasta.


Once your water reaches a rolling boil you can add your pasta.  Cook until it is to your liking.

I usually heat the black beans and corn in a pot on the stove or in a bowl in the microwave.  This time I chose to heat them in bowls.

While you wait for your pasta to be cooked you can dice some of your white onion and roma tomatoes.

When everything is ready the rest is just assembling...

I like to assemble them plate by plate for some strange reason...so here is what I do



Place a helping of pasta on each plate.


Slice your grilled chicken breast and place on top of pasta.


Spoon a good helping of the cheese sauce onto the plate.


Spoon some black beans


Then corn.



Then chopped roma tomatoes


Chopped onion


Mix together and enjoy!!!

  1. The original dish calls for blackened chicken and smoked gouda cheese in the sauce. This was my favorite dish at Ruby Tuesday's and asked while there about the sauce. I have never attempted to make it as I loved the original dish too much to not make it perfectly. I thought I would share the sauce ingredient that was shared with me at the restaurant.
