Guacamole


This is the guacamole I made at Candise's party.  It is so YUMMY!  I forget who told me how to make it but I am forever grateful!!!  This recipe is very simple to make and highlights the wonderful flavor of the avocado.


Here is all you will need:

2 Haas avocados (do not use any other)
cilantro
red onion
Serrano pepper (or jalapeno)
juice from a fresh lemon
salt
pepper
garlic salt

Ok,  Let's do this...


In order to remove the avocado, I cut it in half (long ways) and pull it apart.  Remove the seed and with a spoon remove the insides and place in a bowl.  Then use a fork to smash into your desired consistency. 


Chop your red onion into small bite size pieces.  I use about 1/4 of the onion in mine.


Add the onions to the avocado.


Dice your pepper.  I used the whole pepper.


Add the diced pepper, seeds and all into the bowl and mix.


Chop your cilantro and add to the bowl and mix together.


Now we will add some lemon juice.  With you hand, roll the lemon around on the counter in order to get the juices released.  Then slice your lemon and squeeze the juice of 1/2 of the lemon into the mix.


Add salt


Then pepper and garlic salt.  Mix well and taste to see if you would like to add any more of the ingredients.  


Get your chips out and dig in!!!

Some times I do add some diced roma tomatoes.
